DIATOMISTS
Diatomist is the name given to those who master the art of diatom arrangement. Diatoms are single cell algae that create complex glass shells around themselves. 5 million years ago Jerez was under water which explains the unique and exceptional soil rich in diatom fossils.
These hidden microscopic marvels are essential for the vines to thrive in a hot climate with dry summers and sporadic heavy rainfall. The soils’ porosity locks in the moisture providing essential water reserves for the vines to thrive during the long and sunny growing-season. In fact, the quality of the soil can be quantified by its diatoms.
Albariza soil is unique and exceptional, composed of diatoms, microscopic marine algae fossilised over millions of years.
ALBARIZA SOIL
Porous and soft, albariza has excellent water retention capabilities. The vines can tap into the much needed water reserves over the warm and sunny growing-season.
vine-vigour
Albariza is a very poor soil, ideal for wine-making. The vines penetrate deep into the bedrock to find essential nutrients, up to 10 meters. This vine-vigour ensures a low-yield crop and concentrated grapes.
distinct character
Vines grown in albariza produce unique exceptional wine with distinct character. Structured, pronounced and with impressive length, the alkalide rich soil affords ideal conditions for a unique white wine.

Wine List
We love fresh, floral and fruit driven wine. All our biologically aged wine can be traced back to the soil where the grapes were grown. Our barrel-aged range is made up of carefully selected botas chosen for their freshness in harmony with tertiary flavours. Diatomists are part of a new movement of growers realigning the focus away from the bodega back to the soil and distinct terroirs.
NEW ARRIVAL
SOTOVELO - BENEATH A VEIL OF FLOR
SOTOVELO, a groundbreaking white wine from Palomino grapes, from Balbaina in El Puerto de Santa Maria, Jerez.
Using the unique process traditionally used to create fino, we develop our wine for 8 months beneath a veil of flor (a light covering of yeasts) in wooden barrels, acquiring notes of almond and toasted bread along with saline and mineral undertones combined with the citrus, green apple and nectarine fruitiness of the Palomino variety.

A complex wine blends freshness with an umami/savory/saline profile and a dry finish thanks to its low sugar content (<1g/L); ideal with all Mediterranean cuisine, olives, matured cheeses, cured ham and seafood, or on its own.
WINE LIST
SINGLE PAGO
Our Single Pago range consists of bottles sourced from a particular vineyard within the Appellation of Jerez. We recognise that every pago imparts its own character on the grapes and the final bottle. All things can be measured by the sum of its parts, Diatomists’ believe in this maxim and work with growers focused on producing the best fruit as a true expression of their soil.
SINGLE PAGO
Manzanilla de Sanlúcar
100% Palomino and aged for 5 years in bota, this is an invigorating white wine with a subtle, floral, mineral nose. Great intensity with sea breeze salinity running through an impressive structure, there is tension on the palate. The yeasty, baked bread flavours are in balance with apricots and golden apples. In the mouth the texture is silky and round, with an extremely long and clean finish. A unique style of Manzanilla to be served chilled with food or as an aperitif.
Wine List
Singular Bota
Our Singular Bota range consists of carefully selected barrels from the cavernous bodegas in Jerez. We look for characterful barrel-aged wines which are balanced and harmonious: fruit and acidity, providing much needed freshness, along-side tertiary flavours. Selected from individual, numbered botas requiring extensive tastings, our goal is to find the liquid that clearly reflects the grapes’ journey from soil to solera.

Oloroso - Jerez de la Frontera - Singular Botas, aged 12 years, NV. 375ml – 19% Vol
Brilliant mahogany lights up the glass and prepares you for an alluring toasted hazelnut aroma. Made from 100% Palomino aged for 12 years in bota, this is a very silky and fine Oloroso with a luscious feel in the mouth. Orange peel gives a pronounced freshness to complement a backbone of brooding, nutty flavours. On the end the solera comes to the fore leaving a vanilla and cigar box finish which is persistent and long. The perfect accompaniment with game or after a meal with or without cheese.
